  1. Spicy Peanut Sauce

  2. 1/2 cup 99g / 3 1/2oz Peanut butter

  3. 1/2 cup 118ml Hoisin sauce

  4. 1 tablespoon 15ml Honey

  5. 2 teaspoons 10ml Red wine vinegar

  6. 2 teaspoons 10ml Ginger - minced

  7. 2 tablespoons 30ml Roasted sesame oil

  8. 2 teaspoons 10ml Soy sauce

  9. 1 teaspoon 5ml Vietnamese chili sauce - or Dried chili flake

  10. 1 tablespoon 15ml Oyster sauce

  11. 2 tablespoons 30ml Water

  12. Thai Chicken Pieces

  13. 1 tablespoon 15ml Olive oil

  14. 10 oz 284g Chicken breasts - boned and Skinned

  15. Cut into 3/4" cubes

  16. For The Pizza

  17. 1 Basic pizza dough

  18. Cornmeal - semolina or flour

  19. For handling

  20. 2 cups 292g / 10oz Mozzarella cheese --

  21. Shredded 4 Scallions - slivered

  22. Diagonally

  23. Oriental style

  24. 1/2 cup 80g / 2.8oz White bean sprouts

  25. 1/4 cup 27g / 1oz Shredded carrot

  26. 2 tablespoons 30ml Roasted peanuts - chopped

  27. 2 tablespoons 30ml Cilantro - chopped, fresh

  1. To make spicy peanut sauce: Combine sauce ingredients in a small pan over medium heat. Bring the sauce to a boil; boil gently for one minute. Divide into two portions for use on chicken and pizza; set aside.

  2. To make Thai chicken: Cook the chicken in olive oil over medium-high heat, stirring, until just cooked 5 to 6 minutes. Do not overcook. Set aside in the refrigerator until chilled through. Once chilled, coat the chicken with 1/4 cup Spicy Peanut Sauce. Set aside in the refrigerator.

  3. To make the pizza: Place pizza stone in the center of the oven and preheat to 500F for one hour before cooking the pizzas.

  4. Use a large spoon to spread 1/4 cup spicy peanut sauce evenly over the surface of the prepared dough within the rim. Cover the sauce with 3/4 cup shredded mozzarella.

  5. Distribute half the chicken pieces evenly over the cheese followed by half the green onions, bean sprouts and carrots, respectively. Sprinkle an additional 1/4 cup shredded mozzarella over the other toppings and top the pizza with 1 tbs. chopped roasted peanuts.

  6. Transfer the pizza to the oven; bake until the crust is crisp and golden and the cheese at the center is bubbly, 9 to 10 minutes. When cooked through, carefully remove the pizza from the oven. Sprinkle 1 tablespoon chopped fresh cilantro over the hot, cheese surface. Slice and serve. Repeat with remaining ingredients for a second pizza.
