  3. 2 medium Ripe Mangoes Peeled & Diced

  4. 1 whole(s) Red Pepper Diced

  5. 1/2 English Cucumber Diced

  6. 1/4 cup(s) Toasted Pine Nuts

  1. Cook Shrimp. Drain & Refresh in cold water & drain. (Another option is to marinate the shrimp in a small amount of dressing and grill them.)

  2. Put spinach in a bowl and add diced veggies and shrimp and dressing(separate recipe), Garnish with pine nuts
