  1. 3 lbs 1362g / 48oz Lean chuck roast

  2. 1/2 cup 118ml Beef stock

  3. 6 Bay leaves

  4. 2 Fresh thyme

  5. 1/2 cup 55g / 1.9oz Carrot, in

  6. 1/2 cup 31g / 1.1oz Onion, in

  7. 1/2 cup 118ml Leeks, in

  8. 2" lengths

  9. 1/2 cup 55g / 1.9oz Celery, in

  10. 1" lengths

  11. 1/2 cup 118ml Potato, in

  12. 1/2" dice

  13. Salt - to taste

  14. Freshly-ground black pepper - to taste

  15. Whole-grain mustard

  1. In a heavy cast-iron pot, sear the roast on all sides over high heat. Then add stock and herbs and simmer tightly covered for 30 minutes. Add vegetables and simmer tightly covered another 30 minutes. Add salt and pepper to taste and serve in a large pasta bowl with mustard on the side.

  2. This recipe yields 8 servings.
