  1. 1 pack muffins, split and toasted

  2. 250g pack back bacon

  3. 1 tablespoon white wine vinegar

  4. 4 large size eggs

  5. 250ml jar Hollandaise sauce

  6. 1/2 (15g) pack fresh chives, chopped

  1. Place the bacon on a grill pan and cook for 4-5 minutes.

  2. In the meantime, poach the eggs. Heat a pan of water with a tablespoon white wine vinegar until the water is boiling.

  3. Turn off the heat, crack in the eggs and cover. Leave to stand for 3 minutes until the whites are opaque.

  4. To assemble, place the muffins on individual plates, top with grilled bacon, drain the egg and place on top, spoon over some hollandaise sauce, sprinkle over a few chives and serve immediately.
