  1. 2 1/2 ounces Fois Gras, medium diced

  2. 1 tsp. shallots, chopped

  3. tsp. garlic, chopped

  4. 2 tsp. balsamic vinegar

  5. 3 each sweet potato chips

  6. mixed greens

  7. kosher salt and fresh ground black pepper to taste

  1. Thinly slice peeled sweet potatoes and deep fry in vegetable oil untilcrispy.

  2. Drain and season with Kosher salt and fresh ground black pepper.

  3. Saut fois gras in smoking hot pan. Remove from pan.

  4. Saut shallots and garlic until translucent, the deglaze with balsamic vinegar and reduce to sauce consistency.

  5. Add fois gras to sauce, toss and poor over mixed greens. Garnish with potato chips.
