  1. 1 large flour tortilla Various greens such as chard , beet, spinach, etc. Mild New Mexico chili powder pinch of salt and pepper Cheese substitute:

  2. 1 T nutritional yeast

  3. 2 1/2 T flour water to make a paste

  1. Chop all greens (use the stems too).Start sauteeing the veggies in a little oil. While veggies are cooking mix up the yeast paste. Put the tortilla in a large skillet. Spread the paste all over it and add sauteed veggies. Fold in half and grill till tortilla is browned. Use a pizza cutter to cut in wedges, top with your favorite salsa/sauce and you are good to go!
