  1. 1 pitta bread, cut in half

  2. 1 tablespoon olive oil

  3. 2 medium potatoes, cooked and diced

  4. 2 eggs, beaten

  5. salt and freshly ground black pepper to taste

  1. Preheat oven to 180 C / Gas mark 4. Place pitta bread in oven to warm.

  2. Heat oil in a medium frying pan over high heat. Add potatoes and sauté until lightly browned, about 5 minutes. Reduce heat to medium and add eggs. Mix gently until eggs are firm, about a minute. Season with salt and pepper. Remove pitta from oven. Stuff pitta with potato and egg mixture. Serve immediately.
