  1. Sweet Potato Pie With Marshmallow Meringue Topping

  2. 1 1/2 cups graham crackers, crushed

  3. 1/3 cup granulated sugar

  4. 1/8 tsp salt

  5. 5 Tbsp butter, melted

  6. 1 1/2 cups mashed sweet potatoes (cooked fresh or drained canned)

  7. 1 cup (packed) golden brown sugar

  8. 1 cup whipping cream

  9. 3 large eggs

  10. 1 tsp vanilla extract

  11. 3/4 tsp ground cinnamon

  12. 1/4 tsp ground mace

  13. 1/4 lb marshmallows (about 2-cups miniature marshmallows)

  14. 1 Tbsp milk

  15. 2 egg whites

  16. 1/4 cup sugar

  17. 1/4 tsp salt

  18. 1/2 tsp vanilla

  19. Preheat oven to 325 F. Mix graham cracker crumbs with sugar and butter. Spread evenly over bottom and sides of a 9-inch pie pan and bake 5 minutes. Remove from oven and cool.

  20. Preheat oven to 400 F.

  21. Place mashed sweet potatoes in large bowl. Whisk in brown sugar,

  22. whipping cream, eggs, vanilla extract, cinnamon, mace and salt. Mix

  23. well and transfer filling to pie crust.

  24. Bake until pie is set the in center, about 45 minutes. Transfer to

  25. a rack and cool.

  26. Preheat oven broiler. In a saucepan on the stove top over medium

  27. heat, heat marshmallows and milk, folding gently until marshmallows

  28. are about half melted. Remove from heat and continue folding until

  29. mixture is smooth and fluffy. In a separate bowl, beat egg whites,

  30. add sugar gradually and continue beating until stiff and smooth.

  31. Add salt and vanilla. Fold into marshmallow mixture and spread over

  32. pie. Bake under oven broiler about 1 minute or until light brown.

  33. Enough Meringue for 1 (9-inch) pie.
