  1. 250 g unsalted butter , softened

  2. 250 g caster sugar

  3. 250 g self-raising flour

  4. 1 tsp baking powder

  5. 4 eggs

  6. 220 g unsalted butter

  7. 400 g icing sugar

  8. 1 tsp vanilla extract

  9. writing icing

  10. assorted halloween sweets , to decorate

  1. Preheat the oven to 175C.

  2. Line muffin trays with 18 cupcake papers.

  3. For the cupcakes: Place all the cupcake ingredients into a mixing bowl and beat with a mixer until pale and fluffy (2-3 minutes).

  4. Distribute the mixture between the cupcake papers.

  5. Bake for 20 minutes until golden brown.

  6. Remove and allow to cool for 5 minutes in the tins, before cooling completely on a wire rack. Once cold you can prepare the icing.

  7. For the icing: Cream the butter, sugar and vanilla in a medium bowl.

  8. Separate the icing into several smaller bowls and add a couple of drops of food colouring to each to make different coloured icing.

  9. Smear the icing onto the cooled cupcakes. Decorate with writing icing and Halloween sweets of your choice.
