  2. EASY ENGLISH MUFFINS

  7. 1/2 c Shortening

  8. 4 ts Salt

  9. 2 ts Sugar

  10. 2 c Boiling water

  11. 2 pk Active yeast

  12. 5 c Flour

  13. Put shortening, salt and sugar in large bowl. Pour

  14. boiling water over all and stir until shortening

  15. melts. Let cool to lukewarm. Sprinkle yeast over this;

  16. stir to dissolve; let stand until mixture begins to

  17. bubble. Add flour and beat.

  18. Roll out on floured board to about 3/8-inch

  19. thickness. Cut with round cutter, I use clean, empty

  20. tuna can. Sprinkle cookie sheets with cornmeal. Set

  21. muffins on these, fairly far apart. Let rise to double

  22. in bulk. Set griddle or electric frypan to 350

  23. .

  24. Sprinkle with cornmeal. Put muffins, rounded side

  25. 7 minutes. Turn and bake

  26. minutes on the other side. Split with fork, and toast

  27. or spread with butter and put under broiler until

  28. butter bubbles.

  29. These muffins freeze successfully. They should be

  30. split with fork before freezing. The recipe may be

  31. doubled when preparing muffins for the freezer. When I

  32. make these, I make 5 or 6 recipes!!!

  33. They are even better than Wolfermans!!! I could
