  1. 250g almond or peanut butter

  2. 1/3 cup honey

  3. 2 organic or free-range eggs

  4. cup grapeseed or light olive oil

  5. 2 cups (240g) almond meal

  6. cup dark chocolate chips

  7. 2/3 cup chopped dried cranberries

  8. 2 tbsp pumpkin seeds

  1. Preheat oven to 175°C (155°C fan). Mix together nut butter and honey. Add eggs and oil and combine well. Stir in almond meal, chocolate chips and cranberries.

  2. Place level tablespoonfuls on a baking tray lined with baking paper, flatten slightly and sprinkle with pumpkin seeds. Bake for 12-15mins, or until golden. Transfer to a wire rack to cool. Store in an airtight container for up to 1 week.
