  1. 500g boneless chicken fillets

  2. olive oil

  3. 2 tablespoons Thai curry paste (or to taste)

  4. 1 large onion (sliced)

  5. 1 x broccoli & cauliflower (About 8 flowers broken off each)

  6. mushrooms

  7. 1 x tin litre coconut cream

  8. Jasmine rice

  1. Slice chicken fillets into small pieces and stir-fry in olive oil. Use a wok or a deep fry pan and cook until golden brown.

  2. Add the vegetables and mix and stir-fry.

  3. Add curry paste and stir-fry for 1 minute.

  4. Add 1 tin coconut cream and stir. Simmer for 2 few minutes.

  5. Add salt and pepper to taste.

  6. Serve with steamed Jasmine rice.
