  1. 6 bunches collard greens

  2. 4 quart water

  3. 2 large smoked turkey legs

  4. 5 stalks celery, diced

  5. 1 large yellow sweet onion, diced

  6. Bacon grease

  7. Salt to taste

  8. Pepper to taste

  1. Cut stemless leaves into 1/2 inch strips.

  2. Submerge turkey legs in water. Bring to boil, then reduce to a simmer.

  3. Sauté celery and onion in bacon grease, then add to pot.

  4. Cook for 1 hour, then debone turkey.

  5. Add greens to pot and cook till al dente.
