  5. 2 tablespoon(s) Applejack Brandy or Calvados

  6. 6 medium (about 2 1/2 pounds)

  7. sweet potatoes

  8. 3/4 teaspoon(s) salt

  9. 1/4 teaspoon(s) coarsely ground black pepper

  10. 1/4 teaspoon(s) ground nutmeg

  11. 1 cup(s) apple cider or apple juice

  12. 2 tablespoon(s) margarine or butter

  13. 3 slice(s) firm white bread , cut into 1/2-inch pieces (about 1 3/4 cups)

  14. 1/2 cup(s) pecans , coarsely chopped

  1. Prepare Sweet Potato Layers: Grease shallow 2 1/2-quart casserole. In 12-inch skillet, melt margarine over medium heat. Add apples and onion, and cook, stirring frequently, until tender and golden, about 25 minutes. Stir in Applejack Brandy; cook 1 minute. Remove skillet from heat.

  2. Meanwhile, peel and thinly slice sweet potatoes. In cup, mix salt, pepper, and nutmeg.

  3. Arrange one-third of sweet-potato slices, overlapping, in casserole. Spoon one-third of apple mixture over potatoes. Sprinkle with one-third salt mixture. Repeat layering 2 more times. Pour apple cider over potato and apple layers. Cover with foil and refrigerate up to 1 day.

  4. Prepare Pecan-Crumb Topping: In nonstick 10-inch skillet, melt margarine or butter over medium heat. Cook bread pieces and pecans until bread and pecans are lightly toasted, about 5 to 6 minutes, stirring occasionally. Cool crumb topping completely. Transfer crumb topping to small container; cover and set aside.

  5. Preheat oven to 400 degrees F. Bake casserole, covered, 1 hour. Remove foil on casserole; sprinkle casserole with crumb topping just before serving.
