  1. 2c. water

  2. 1c. uncooked long grain white rice

  3. 1/4c. chopped green onions

  4. 2 fresh red chilies; seeded & chopped

  5. 1T. snipped cilantro

  6. 1T. butter

  7. 1t. fresh ginger; minced

  8. 3/4t. salt

  9. 1/8t. ground tumeric

  10. 1 to 2t. lime juice

  11. chopped roasted peanuts & red pepper flakes: optional garnish

  1. Combine 1st 9 ingredients in 2 to 3 qt. saucepan.

  2. Bring to a boil; stirring once or twice.

  3. Reduce heat; cover & simmer 15 min. or until rice is tender & liquid is absorbed.

  4. Stir in lime juice & fluff with a fork.

  5. Garnish with peanuts & red pepper flakes.
