  1. 8 medium red potatoes

  2. 65ml (1/4; cup) chopped fresh parsley leaves

  3. 65ml (1/4; cup) chopped spring onion tops

  4. 250ml (1 cup) chopped celery

  5. 3 hard-boiled eggs, chopped

  6. 65ml (1/4; cup) chopped red pepper

  7. 65ml (1/4; cup) diced pimento

  8. 1 tsp lemon-pepper seasoning

  9. 2 tbsps salt

  10. 1 tbsp Dijon mustard

  11. 65ml (1/4; cup) mayonnaise

  12. 250ml (1 cup) sour cream

  1. The Lady's warm potato salad 1) Boil potatoes with skins for 10 to 15 minutes, until tender. Let cool just to the touch and cut into cubes.

  2. In a large bowl, combine remaining ingredients. Add potatoes and mix gently.

  3. Serve at room temperature.
