  1. 8 cups of vegetable broth

  2. 1lb. mushrooms

  3. chili paste to taste

  4. 1 can pineapple chunks

  5. 1 red pepper

  6. 1 yellow pepper

  7. 1-2 serrano chilies - de-seeded and minced.

  8. 1 lime - juice & skin zest

  9. 1/2 bunch cilantro

  1. Simmer the veggie broth just below a boil.

  2. Add 1 tsp. (or to taste - I added a 3 tbs by the end but I like it spicy) - chili paste Add the mushrooms - sliced or diced.

  3. Add the peppers - 2" thin long slices Add the Pineapple.

  4. Add the serrano chili Stir in the lime juice + zest I cooked it to just about boiling, then cooked it for a few more hours at low. Depending on how slow cooked you like to combine things, you could cook this for 1-4 hours.

  5. * Keep adding chili paste until it is spicy enough for your taste.

  6. Garnish with cilantro just before serving.
