  1. 2 pounds chicken cutlets, large, pounded thin

  2. 1/2 pound ham , sliced

  3. 1/2 pound mozzarella cheese, sliced thin

  4. 1/2 pound seasoned bread crumbs

  5. 2 egg s, beaten

  6. 3 tablespoons olive oil

  7. 1 1/2 cups water

  1. Preheat oven to 350 degrees. Place one slice of ham and one slice of mozzarella on each chicken cutlet. Roll up, tucking in the sides and ends, until it resembles a large meatball. Coat first with egg mixture and then with seasoned bread crumbs. Add oil and water to the pan. Place chicken in pan seam side down. Baste the cutlets with water and oil from the pan. Cook at 350 degrees for 45 minutes to 1 hour until nicely browned and cooked throughout, adding water if needed. Use a spatula to loosen and remove from pan. Let sit for 15 minutes before slicing.
