  1. 1 medium green bell pepper -- seeded amd diced

  2. 3/4 cup sliced onion

  3. 1/2 cup diced celery

  4. 1 packet instant chicken broth and seasoning mix

  5. 1 clove garlic -- minced

  6. 10 ounces skinned and boned chicken breasts -- diced

  7. 2 1/2 cups canned whole tomatoes -- chopped

  8. 2 cups each; water and drained canned whole kernel corn

  9. 1 1/4 cups frozen okra -- cut into pieces

  10. 1 1/2 teaspoons salt

  11. 1/2 teaspoon hot sauce

  1. Preparation : In 6 quart stockpot combine green pepper, onions, celery, broth mix, and garlic; cook, stirring frequently, until all vegetables are tender. Add chicken, tomatoes, and water to vegetables and bring to a boil. Reduce heat, cover, and let simmer for 30 minutes. Add corn, okra, salt, and hot sauce to chicken mixture; cook uncovered, stirring frequently, for 45 minutes.
