  1. 300g self raising flour

  2. 220g unsalted butter

  3. 215g caster sugar

  4. 120g desiccated coconut

  5. 120g raisins / sultanas / currants a few drops of vanilla extract

  6. 3 large eggs

  1. Cream together the butter and sugar. Add the eggs and whisk. Sift the flour and fold into the mixture. Add the coconut, raisins and vanilla.

  2. Place into a LARGE-ISH greased roasting tin. Bake in the oven for around 20 mins until cooked throughout. Slice ito 12 pieces (or more/less). Enjoy!
