  1. 4 medium potatoes, diced

  2. 1 small onion, diced fine

  3. 8 slices, Oscar Meyer Thick sliced Bologna, diced

  4. 4 eggs, &

  5. 1 tsp. water, beaten

  6. 1/4 cup cooking oil, or a little more if needed

  7. Salt & pepper to taste

  1. Heat oil in a heavy bottomed deep pan or Dutch oven, over medium high heat, until hot. Add potatoes & cook for approximately 3 to 4 minutes or until they start to get semi soft. Add onions & cook about 3 more minutes. Add bologna & cook 2 more minutes, by this time potatoes & onions are tender & golden brown. Remove all from pot; drain almost all oil, re-heat pan & start to scramble eggs. When they are ½ done add all other ingredients together & finish cooking.
