  4. 1 c Graham Cracker Crumbs

  5. 3 T Granulated Sugar

  6. 3 T Margarine, Melted

  7. 24 oz Cream Cheese, Softened

  8. 1/2 c Granulated Sugar

  9. 1/2 c Unbleached All-Purpose

  10. 4 ea Large Eggs

  11. 1/4 c Unsweetened Orange Juice

  12. 1 c Finely Shredded Carrot

  13. 1/4 c Raisins

  14. 1/2 t Ground Nutmeg

  15. 1/4 t Ground Ginger

  16. 1 T Unsweetened Orane Juice

  17. 1 c Sifted Powdered Sugar Combine crumbs, granulated sugar, cinnamon and margarine, press onto bottom

  18. 9-inch springform pan. Bake at

  19. 325 degrees F.,

  20. 10 minutes.

  21. 20 ozs cream cheese, granulated sugar and 1/4 c flour, mixing at

  22. medium speed on electric mixer until well blended. Blend in eggsand juice.

  23. Add combined remainig flour, carrots, raisins, and spices; mix well. Pour

  24. 450 degrees F.,

  25. 10 minutes. Reduce oven temperature

  26. 250 degrees F., continue baking for 55 minutes more. Loosen cake from

  27. rim of pan; cool before removing rim of pan. Chill.

  28. Combine remaining cream cheese and juice, mixing until well blended.

  29. Gradually add powdered sugar, mixing until well blended. Spread over top

  30. of cheesecake. Garnish with additional raisins and finely shredded

  31. carrots, if desired. --
