Apple Walnut Cake with Lemon Butter Frosting

4 c Apples; peeled, chopped

2 c Sugar

2 Eggs; slightly beaten

1/2 c Oil

1 ts Vanilla

2 c Flour

2 ts Baking soda

2 ts Cinnamon

1 ts Salt

1 c Walnuts; chopped

**lemon butter frosting**

4 tb Butter

3 c Confectioner's sugar

2 tb Lemon juice

2 tb Water

00 In bowl stir together apples

and sugar; let stand 5 minutes.

Stir together eggs, oil and vanilla. Sift flour, baking soda, cinnamon

and salt. Blend in egg mixture. Fold in apples and walnuts, mixing well.

13 x 9 baking pan. Bake at

350 for minutes or until done. Cool and frost with Lemon Butter Frosting. Frosting:

In bowl combine butter, sugar, lemon juice and enough water for spreading
