  1. Ingredients (serves 4)

  2. 1/4 rockmelon, peeled, seeded

  3. 12 slices prosciutto

  4. 160g mixed baby spinach & rocket leaves

  5. 180g Persian feta, oil reserved, crumbled

  6. 1 tbs balsamic vinegar

  1. Cut the rockmelon into wedges. Cut each wedge in half crossways.

  2. Divide the rockmelon, prosciutto, spinach leaves and rocket leaves among serving plates. Top with feta.

  3. Whisk the vinegar and 60ml (1/4 cup) of the reserved oil in a small bowl. Drizzle over the salad and season with pepper.
