  1. 2 large red or pink grapefruits , peel and pith cut away

  2. 1 red Fresno or jalapeño chile , seeded and minced

  3. 3 tablespoon(s) diced red onion

  4. 2 tablespoon(s) slivered fresh basil leaves

  5. 1 teaspoon(s) thyme

  6. 4 (6-ounce) 1-inch-thick halibut fillets

  7. Vegetable oil , for fillets Salt , to taste Pepper , to taste

  1. Heat oven to 450 degrees F. Cut away the peel and pith from 2 large red or pink grapefruit; cut segments into a bowl; snip segments into smaller pieces. Add juice from membranes, chile, onions, basil, and thyme.

  2. Brush the halibut fillets with vegetable oil and season with salt and pepper. Roast on a baking sheet lined with parchment paper or nonstick foil 10 to 12 minutes, until cooked through. Spoon salsa over fish.
