  1. 2 eggs

  2. 2 tablespoons Dijon mustard

  3. 1 cup seasoned breadcrumbs

  4. 1/2 cup grated parmesan cheese

  5. 1 1/2 teaspoons garlic powder

  6. 1 1/2 teaspoons onion powder

  7. 4 boneless skinless chicken breast halves

  8. 3 tablespoons vegetable oil

  1. Beat eggs and mustard in a shallow bowl.

  2. Combine bread crumbs, Parmesan cheese, garlic powder and onion powder in another shallow bowl.

  3. With a meat mallet, flatten chicken to 1/4 inch thickness.

  4. Dip each chicken piece in egg mixture, then into crumb mixture to coat thoroughly.

  5. Heat oil in a large skillet, cook chicken over medium heat for 15-20 minutes, turning once, until chicken is golden brown. ?
