  2. 2 tbsp. vegetable oil

  3. 1 green bell pepper, stemmed, seeded and chopped

  4. 1 medium onion, peeled and chopped

  5. 1/2 cup sliced fresh mushrooms

  6. 1 pound boneless skinless chicken breasts, cut into 1 inch pieces

  7. 1 cup sweet and sour sauce

  8. 1 1/2 tbsp. soy sauce

  9. 20 ounce can pineapple chunks, drained

  10. 2 tbsp. pineapple juice

  11. hot cooked rice

  1. Place the oil in a large skillet over medium heat. Add the green pepper, onion and mushrooms to the skillet and cook until crisp tender, stirring occasionally. Transfer the vegetables to a bowl. Add the chicken to the skillet and cook until browned on all sides, stirring frequently. Return the vegetables to the skillet along with the sweet and sour sauce, soy sauce, pineapple and pineapple juice. Cook until heated through, stirring frequently. Serve over hot cooked rice.
