  2. Title: WARM SPICED CHICKEN SALAD WITH BALSAMIC DRESS

  5. 3 tb Balsamic vinegar

  6. ts Ground cumin

  7. 1/2 ts Ground corriander

  8. Salt and pepper

  9. 1 lb Chicken breast

  10. 2 tb Oil

  11. 2 ts Sesame oil

  12. 3 tb Peanut or veg. oil

  13. 1/3 c Scallions; thinly sliced

  14. 3 c Lettuce

  15. 1/2 c Radishes; sliced

  16. To make chicken salad combine cumin, corriander salt

  17. and pepper in small bowl. Flatten chicken. Sprinkle

  18. with spices and rub in. Cook chicken in oil for 6

  19. minutes on each side. Remove. To make dressing, add

  20. vinegar, oils and scallions to skillet drippings and cook for 1 minute. Spread lettuce on large platter.

  21. Slice chicken into 1/2 inch strips and lay on top

  22. lettuce. Scatter radishes over salad. Pour warm

  23. dressing over it and serve. --
