  1. 2 c. cranberries, fresh or frozen, coarsely chopped

  2. 1/2 c. sugar

  3. 2 c. whole wheat flour (or all-purpose white)

  4. 1 tsp. salt

  5. 1/4 c. oil

  6. 3/4 c. orange juice

  7. 1 tbsp. grated orange peel

  8. 1 egg

  9. 1/2 tsp. baking powder

  10. 1/2 tsp. soda

  1. Preheat oven to 350 degrees and butter 2 (9″x5″) loaf pans or 3 (7″x5″) pans. Put all ingredients into mixing bowl and stir with wooden spoon until blended. Do not beat.

  2. Divide batter into pans and bake for about 1 hour, or until toothpick comes out clean. Cool bread on racks and do not cut until it is cold. It will keep for days in refrigerator and freezes well.
