  1. 4 Firm tart apples

  2. 1 1/2 cups 297g / 10oz Sugar

  3. 1/4 teaspoon 1 1/3ml Salt

  4. 1/2 cup 118ml Red cinnamon candy

  5. 3 cups 711ml Water

  6. 1/2 cup 73g / 2.6oz Cottage cheese

  7. 1/4 cup 36g / 1 1/3oz Green pepper - chopped

  1. Pare and core apples.

  2. Add sugar, salt, and candy to the water. Put over heat and stir until dissolved.

  3. Cook apples slowly in this syrup in covered pan until just tender, turning occasionally to color evenly.

  4. Drain and chill. Mix cheese with green pepper and stuff the apples.

  5. Serve on watercress or other dark greens.
