  1. Three Bean Salad

  2. 3-6 varieties of beans, canned or fresh cooked

  3. green beans, yellow wax beans black beans, black-eye peas)

  4. 1 cup each type of bean

  5. 1/2 red or orange pepper chopped fine per each 2 scallions or spring onions chopped fine per each 3 cups of beans

  6. 1 teaspoon fresh or dried basil

  7. 1 teaspoon fresh or dried parsley

  8. Three Bean Salad Dressing (see below)

  9. If using canned beans, rinse and drain well first. Mix all of the

  10. above ingredients and refrigerate for 4-5 hours before serving.

  11. This salad is better the second day.

  12. Three Bean Salad Dressing (for 3-4 Cups of Beans)

  13. 1/3 Cup vegetable oil

  14. 1/3 Cup granulated sugar

  15. 1/3 Cup red wine or cider vinegar

  16. 1/2 teaspoon salt

  17. 1/2 teaspoon pepper

  18. Mix dressing well before mixing with beans. The sugar does not

  19. dissolve right away, but will later on in the refrigerator.
