  1. Herb Speckled Pasta

  2. 2 1/4 cups all purpose flour

  3. 3 eggs

  4. 3/4 tsp salt

  5. 1 Tbsp olive oil

  6. 1 Tbsp lukewarm water or milk

  7. 2 Tbsp finely chopped fresh parsley

  8. 1 Tbsp finely chopped fresh marjoram, or 2 Tbsp finely chopped fresh basil, or 1 Tbsp finely chopped fresh thyme, or 1 tsp dried

  9. In a large bowl place the flour and make a well in the center. Add

  10. the eggs, salt, olive oil, and water or milk. Then add the herbs

  11. using your hands, work the dough together. Keep working till the

  12. dough forms a ball. Turn the dough onto a lightly floured board

  13. and knead, adding more flour if needed, until smooth. The kneading

  14. will take about 10 min. Cover with a bowl or cloth and let the

  15. dough rest for 30 min. Use a manual pasta machine and cut the

  16. pasta into fettuccine or any other string pasta you wish. A butter,

  17. olive oil or tomato sauce is good with this recipe.
