  1. 1 1/2 quarts water

  2. 2 1/2 pounds honeycomb tripe, cut in strips

  3. 2 onions, peeled, sliced

  4. 6 potatoes, peeled, sliced

  5. 1 cup parsley, chopped

  6. 2 tablespoons butter Seasonings to taste

  1. Instructions Put in a kettle together the water, tripe, onions, butter and seasonings. Cover. Let boil slowly for about 1 1/4 hours. Add the potatoes and the parsley. Cover again and let cook for about 20 minutes. Then serve.
