  1. Cuban Roast Beef Yield: 8 Servings

  2. 4 oz ham, smoked, chopped fine

  3. 4 oz bacon, chopped fine

  4. 8 oz onion, minced

  5. 1 oz capers, minced

  6. 1 garlic clove, minced

  7. 2 oz green olives, coarse chop

  8. 1 tb green chiles, minced

  9. 3 lb eye round roast

  10. salt

  11. pepper

  12. 2 oz bacon fat

  13. 8 oz stock

  14. 4 oz tomato sauce

  15. 1 tb vinegar

  16. Preheat oven to 350F.

  17. Mix the first 7 ingredients to make a stuffing. Make an incision

  18. 1 1/2" to

  19. 2" deep along the length of the roast Stuff the stuffing

  20. into the incision. Salt and pepper the roast.

  21. Brown the roast on all sides in bacon fat in a large heavy casserole

  22. Add all the rest of the ingredients and cook in the oven for 2 1/2

  23. hours or until the meat is very tender. Check once or twice to

  24. make sure that the liquid is not boiling away. Add water or unsalted

  25. stock as necessary.
