  1. Cooking Procedures : In a saucepan, melt the butter and stir in the flour until thoroughly blended. Add the water and stir. When the sauce is smooth, add the egg yolk little by little, stirring constantly; taking care that the sauce does not boil. Season with salt and pepper.
