  1. 3 cups of diced chicken

  2. 2 Tbsp oil

  3. 1 cup chicken broth

  4. 1/4 Tsp nutmeg

  5. 3 egg yolks

  6. 1/3 cup cream

  7. 1 Tbsp melted butter

  8. 1 Tbsp flour

  9. 12 oz. cooked spinach noodles

  1. Brown the chicken in the oil. Mix in the broth and nutmeg. Let simmer for 30 minutes. Beat the egg yolks and cream in a small bowl. Slowly stir into the chicken mixture. Mix the butter and flour in a small bowl until smooth. Add a little of this mixture at a time to the chicken; stir constantly. Simmer until sauce is thick. Remove from heat and pour over noodles. CAUTION: Do not let the yolks in the sauce cook too long or the sauce will become lumpy.
