  3. 2 tablespoons 30ml Olive oil - divided

  4. Salt - to taste

  5. Pepper - to taste

  6. 1/2 cup 118ml Fresh lime juice

  7. 1 cup 62g / 2 1/5oz Red onion (small)

  8. 1/4 cup 4g / 0.1oz Fresh cilantro

  9. 1/2 Jalapeno pepper - seeded

  10. 2 cups 474ml Cantaloupe - dried, ripe

  11. 1 cup 237ml Avocado - peeled/seeded/dic (large)

  12. 1 cup 146g / 5.1oz Apple - peeled and diced

  13. 1 Romaine lettuce

  1. Brush chicken with 1 tablespoon oil and sprinkle lightly with salt and pepper. Grill or broil 6-8 inches from heat source for 2-3 minutes per side until cooked through. Dice and reserve. In a food processor combine lime juice, onion, cilantro, and jalapeno. Process until finely chopped.

  2. Gradually add oil with machine running. Season to taste with salt and pepper. In a salad bowl toss chicken, melon, avocado and jicama with dressing. Serve on a bed of Romaine lettuce leaves.
