  1. 1 teaspoon baking powder

  2. 1/2 teaspoon salt, optional

  3. 6 large eggs

  4. 1/2 cup shredded cheddar cheese

  5. 1 (4-ounce) can chopped green chilies

  6. 1/2 cup chopped red pepper

  7. 2 tablespoons butter, melted

  8. 1 tablespoon chopped cilantro or parsley

  9. Salsa for accompaniment

  1. In large bowl, stir together baking powder and salt, if desired. Add eggs beat until blended. Stir in remaining ingredients. Pour into greased 9-inch baking dish.

  2. Bake in preheated 350ºF (175ºC) oven until knife inserted near center comes out clean, about 30 to 35 minutes. Let stand 5 minutes before serving.

  3. Cut into 6 (2 x 4-inch) pieces. Serve with salsa, if desired.
