  1. 2-3 cups all-purpose flour

  2. buttermilk or water mixed with sour-cream

  3. salt

  4. cooking oil

  6. 2 cups chopped apples

  8. 2 cups chopped peaches or apricots

  12. 2 cups cooked minced meat (leftovers are perfect!)

  13. 2 cups mashed potatoes (leftovers!)

  14. 2-3 tbsp chopped onions , sauteed in butter

  15. 2 cups sauerkraut sauteed with

  16. 2-3 tbsp chopped onions

  17. 2 cups farmers cheese

  18. 2-3 tbsp sugar , cinnamon , raisins

  19. - 2 cups mushrooms sauteed with onions or shallots , salt , pepper

  20. 2 cups feta cheese or goat cheese

  1. Crust: --

  2. Sift the flour, add 1/2 tsp salt and put it on the kneading board making a little nest Pour enough buttermilk or a mix of half water and half sour cream into your "nest" and cut in with the knife, forming large crumb Mix well and make the soft non-sticky dough.

  3. Add water or flour if needed. -

  4. Form a ball and divide into 3. -

  5. Prepare your filling of choice -

  6. For each piece of dough:

  7. roll out on a floured surface until form a thin round crust about 15-16 inches in diameter put filling in the middle and spread to about 8 inches in diameter fold the non-filled portions of the dough over the filling forming a pentagon - this is a traditional shape, but you can do octagons or triangles - whatever your sense of beauty will tell you.

  8. Using your rolling pin, roll over the folded edges a few times to make them stick together (lightly) -

  9. Heat the oil in the frying pan over medium heat Fry placinta pie folded side down first for about 3-4 minutes, turn over (you can use 2 spatulas or your hands if you are brave), then 3 minutes on the other side.

  10. Let them cool a little and cut into 6-8 pieces, like pizza.

  11. They make perfect party food.

  12. Sweet filling pies could be sprinkled with confection sugar lightly.
