  5. --PUDDING--

  6. 3/4 c Soy milk

  7. 1/4 c Cornstarch

  8. 1/2 ts Baking powder

  9. 1/2 c Maple syrup

  10. 1 1/2 c Packed grated carrots

  11. 3 c Day old whole grain bread

  12. -- crumbs

  13. 2 ts Freshly grated ginger

  14. 2 ts Cinnamon

  15. 1/4 ts Nutmeg

  16. 3/4 c Raisins

  17. 1/3 c Ground walnuts

  18. --COMPOTE--

  19. 1 ea Orange, peeled & chopped

  20. 1 ea Apple, cored & chopped

  21. 1/2 c Dried apricots, chopped

  22. 1 c Water

  23. 1/2 c Frozen pineapple juice

  24. -- concentrate

  25. 2 ts Slivered fresh ginger

  26. --CREME--

  27. 1/2 c Raw cashews

  28. 1/3 c Water

  29. 1/3 c Maple syrup

  30. 1 ts Vanilla

  31. PUDDING: Preheat oven to 350F. Whisk together soy milk, cornstarch &

  32. baking powder. Combine with other pudding ingredients & pour into a

  33. 9 X 5 cake pan. Cover with foil & bake

  34. 1 to 1 1/4 hours. Let cool

  35. 30 minutes & cut into 8 squares.

  36. COMPOTE: Combine all ingredients in a pot & cook over low heat 30 to

  37. 40 minutes, stirring occasionally, until apricots are tender & a

  38. light syrup forms.

  39. CREME: Puree all ingredients in a blender till creamy, smooth & white.

  40. TO ASSEMBLE: Pour about 1/4 c compoteover a serving of pudding: top

  41. with a dollop of creme. --
