  2. Dressing:

  3. 6 tbsp. creamy peanut butter

  4. 1/4 cup chicken broth

  5. 3 tbsp. rice wine vinegar

  6. 3 tbsp. soy sauce

  7. 1 1/2 tbsp. sugar

  8. 1 tbsp. sesame oil

  9. 1 tbsp. peeled, minced fresh ginger

  10. 1/2 tsp. cayenne pepper

  11. Salad:

  12. 8 ounces uncooked soba noodles or linguine

  13. 1 large red or orange bell pepper, stemmed, seeded and cut into matchsticks

  14. 1/2 cup chopped green onions

  15. lettuce leaves

  16. 1/4 cup chopped fresh cilantro leaves

  17. 1/4 cup chopped salted peanuts

  1. For Dressing:

  2. Combine peanut butter, broth, rice wine vinegar, soy sauce, sugar, sesame oil, ginger and cayenne in a blender. Blend on low speed until well combined.

  3. For Salad:

  4. Heat a large pot of lightly salted water to a boil. Add soba noodles or linguine and boil until just tender, stirring frequently. Drain pasta and cool under cold water. Drain pasta well and transfer to a medium bowl. Add bell pepper, green onions and prepared dressing. Toss well to coat. Line the inside of a large serving bowl with lettuce leaves. Spoon the pasta salad into the prepared bowl. Sprinkle the cilantro and peanuts over the top of the salad and serve.
