  1. Oysters - enough to cover screen

  2. Salt oysters in their own juice

  3. Water Pan Seasonings

  4. 1 cup 237ml White wine - dry

  5. 1 tablespoon 15ml Liquid smoke

  6. 1 Lemon - cut up

  7. 1 tablespoon 15ml Parsley - dried

  8. Oysters - juice of

  9. Charcoal - 2 or 3 lbs

  10. Hickory or pecan wood - 2 or 3 small pieces

  1. Soak wood in water. Light charcoal. Let it burn down, then place wood on charcoal.

  2. Put water pan with wine, liquid smoke, parsley, and lemon in smoker cooker.

  3. Add juice from oysters. Fill about half full with water. Place oysters on greased screen on grill and put in smoker cooker.

  4. Close cooker and cook for about 1 to 2 hours, but check it every now and then.
