  5. 1 1/4 c Butter or margarine,

  6. -softened and divided

  7. 2 1/4 c DIXIE CRYSTALS Granulated

  8. -Sugar, divided

  9. 4 lg Eggs

  10. 1/4 c Fresh lemon juice

  11. 2 tb Freshly grated lemon rind

  12. 3 c Cake flour

  13. 1 ts Baking soda

  14. 1/4 ts Salt

  15. 1 1/2 c Buttermilk

  16. 1 pk (16-ounce) frozen

  17. -unsweetened strawberries,

  18. 1 pk (8-ounce) cream cheese,

  19. -softened

  20. 3 c DIXIE CRYSTALS 10-X

  21. -Confectioners Sugar

  22. 2 tb Frozen lemon concentrate,

  23. -thawed

  24. Fresh strawberries for -garnish

  25. Beat 3/4 cup butter at medium speed with an electric mixer until creamy;

  26. gradually add 1 3/4 cups granulated sugar, beating well. Add eggs, one at a

  27. time, beating well after each addition. Add lemon juice and lemon rind,

  28. beating well. Combine flour, baking soda, and salt; add to butter mixture,

  29. alternately with buttermilk, beginning and ending with flour mixture. Mix

  30. at low speed just until blended after each addition. Pour batter into 3

  31. 9-inch round cakepans. Bake at

  32. 350 for 30 minutes or until a wooden pick inserted in center comes out clean. Cool in pans 10

  33. minutes; remove from pans, and cool completely on wire racks.

  34. Bring strawberries and remaining 1/2 cup granulated sugar to a boil in a

  35. medium saucepan, stirring and mashing strawberries with a potato masher.

  36. 4 minutes, or until mixture is reduced to

  37. 3/4 cup, stirring

  38. frequently. Cool to room temperature.

  39. Beat cream cheese and remaining 1/2 cup butter at medium speed with an

  40. electric mixer until fluffy. Gradually add confectioners sugar, beating

  41. until smooth. Add lemon juice concentrate, beating well. Spread strawberry

  42. mixture between layers to within 1/2 inch of edge. Spread cream cheese

  43. frosting between layers over strawberry mixture and on top and sides of

  44. cake. Garnish, if desired. --
