  1. 1 cup 160g / 5.6oz Basmati rice

  2. 1 cup 62g / 2 1/5oz Corn kernels

  3. 1 cup 237ml Green peas

  4. 10 Cashews halved - (10 to 12)

  5. 1 teaspoon 5ml Chilli powder

  6. 1 teaspoon 5ml Sambhar masala

  7. 1/2 teaspoon 2 1/2ml Garam masala

  8. 1 teaspoon 5ml Sugar

  9. 1/4 teaspoon 1 1/3ml Turmeric Salt to taste

  10. 1 Lemon - juice of

  11. 2 tablespoons 30ml Oil or ghee

  12. 1/2 teaspoon 2 1/2ml Cummin and mustard seeds

  1. Recipe Instructions In a heavy saucepan heat the ghee. Add the cashews and fry till light brown. Remove. To same oil add cumin and mustard seeds to splutter. Add the corn, peas, rice and all dry masalas and 5 cups water. Cover and cook till almost done. Add lemon juice, sugar, coriander and cashews. Cover and cook till rice is done and no water is left. Masalas may be added as per desi red spiciness. Serve hot with curds.
