  3. 1 clove garlic -- mashed

  4. 3 tablespoons fresh lime juice

  5. 1 jalapeno -- seeded and diced

  6. 2 tomatoes -- seeded and chopped

  7. 1 small red onion -- chopped fine

  8. 1/4 cup fresh cilantro leaves -- finely chopped

  9. salt and freshly ground pepper -- to taste

  1. Halve and pit avocados and scoop flesh into a large bowl. Mash avocado with a fork and stir in remaining ingredients, combining well. Chill covered with plastic wrap for at least 1 hour and up to 1 day. Stir guacamole well and serve with tortilla chips.

  2. Yield: about 3 cups
