  1. Crust

  2. 1 1/2 cups 139g / 4.9oz Almonds

  3. 1 1/4 cups 296ml Dates - pitted

  4. Filling

  5. 6 cups 1422ml Peaches - sliced

  6. 1 tablespoon 15ml Maple syrup

  7. 1/4 teaspoon 1 1/3ml Almond extract

  8. 2 tablespoons 30ml Shredded coconut

  1. CRUST: Grind the almonds and set aside. Grind the dates to form a paste. Add the ground almonds and form a ball. Press into an 8" pie plate. Refrigerate until ready to fill.

  2. FILLING: Toss the peaches with the maple syrup and almond extract. Spoon into the pie crust and sprinkle with the shredded coconut. Serve.
