  1. 3/4 cup (165g) caster sugar

  2. 1 cup (250ml) water

  3. 2cm piece fresh ginger, sliced thinly

  4. 2 stems fresh mint

  5. 2 strips lime rind

  6. 1 small (650g) red papaya, peeled,

  7. seeded, sliced thinly

  8. 2 medium (860g) mangoes,

  9. chopped coarsely 2 limes, peeled, sliced thinly

  10. 12 (250g) lychees, peeled, seeded

  1. Combine sugar, measured water, ginger, mint and rind in a medium saucepan.

  2. Stir over a low heat until the sugar is dissolved. Bring to the boil; reduce heat, simmer, uncovered, without stirring, for 10 minutes. Strain into a jug; cool for 10 minutes. Refrigerate, covered, until cold.

  3. Just before serving, place syrup and remaining ingredients in a large bowl; toss gently to combine.

  4. Not suitable to freeze or microwave.
