  1. Sorrel Drink- Jamaica

  2. 1/4 pound sorrel sepals

  3. strip of dried orange peel

  4. cinnamon stick

  5. few whole cloves

  6. 1 gill rum (1/2 cup American or 1/4 pint Imperial or 8 tablespoons)

  7. 1 gallon boiling water

  8. 2-3 pounds sugar

  9. 1 teaspoon powdered cinnamon

  10. 1/2 teaspoon powdered cloves

  11. Put the dried sorrel, orange peel, cinnamon stick and whole cloves

  12. in a gallon jar, pouring the water over. When cool, cover and leave

  13. the mixture to steep for 2 days. Then strain off the liquid, add

  14. sugar to taste rather sweet, add rum, powdered or ground spices

  15. and let it stand for another 2 days before serving chilled or with

  16. crushed ice. This is a popular drink at Christmas time when sorrel

  17. is in season in Jamaica. The dried sorrel will last for months if

  18. stored in a dry place.
