    1. 3 tbsp (45ml) butter

    2. 3 onions, sliced

    3. 6 medium potatoes, peeled and sliced

    4. 1 tbsp (15ml) curry powder

    5. 2 cubes chicken stock

    6. 1 tbsp (15ml) tamarind sauce (see below note)

    7. 2 cups (500ml) water

    8. 6 ice cubes with parsley springs set in them

    1. Method :

    2. Melt butter, add onions and gently fry till transparent. Add potatoes, curry powder, crumbled stock cubes, tamarind sauce and cover with water. Bring to a boil and simmer for 30 minutes. Blend or push through a sieve. Chill thoroughly before serving.
