  8. 2 cans red kidney beans -- drained

  9. 1 can corn kernels -- drained

  10. 1 1/2 cups cooked rice

  11. 1/2 cup green onions -- sliced

  12. 1 can Ro-Tel Diced Tomatoes and Green Chilies

  13. 1/4 cup lemon juice

  14. 2 tablespoons red wine vinegar

  15. 2 teaspoons lemon peel -- grated

  16. 1 teaspoon olive oil

  17. 1/2 teaspoon sugar

  18. In a large bowl combine beans, corn, rice, green onions and Ro-Tel; set

  19. aside. In a 1-cup measure combine remaining ingredients; pour over bean

  20. 3 to 4 hours before serving. Serves

  21. I usually substitute lime for the lemon.
